I've also found that different types of salmon have varrying levels of the fishy flavor. I have a market where I go down here and get sockeye salmon, and I love that, tastes very different from the stuff I used to buy. I would suggest experimenting with what type of salmon you buy (wild vs. farmed) to help change it up.
